1/4 cup of Flax Seed, ground
1 Tbsp butter
1 egg
1 Tbsp brown sugar
1/2 tsp baking powder
using a coffee mug (8-12 oz size) melt the butter in the microwave (15-30 seconds)
add the flax seed, egg, sugar and baking powder. Mix really well making sure the egg is scrambled well into the mix.
Microwave for 1 minute. Pop out of the mug onto a plate and enjoy!
Variations: try adding nuts, raisins, dried fruit, chocolate chips, or other fun things to the mix before baking.
The texture is kind of souffle like, tasty and surprisingly filling! I fed my husband one of these for breakfast with a side of sausage, fruit and coffee and he felt satisfied and full!
(next time I make this I'll try to take pictures. It was after all morning and I was still sipping my coffee as I tried this out.)
